This delicious and easy recipe is a hit with the kids! A yummy, low GI snack that allows you to easily ‘hide’ heaps of healthy bits into something they’ll happily gobble up. It’s also easy to switch out a few of the ingredients if you want to try and maximise the nutrients.
The best part..? It is so quick and easy to make that you can even do it in the morning before school!

INGREDIENTS:

  • 25g cacao butter
  • 2-3 dates
  • 1/2 cup rice syrup
  • 330g nuts* and seeds (eg mainly almonds, some cashews/walnuts/pecans and hemp seeds
  • 1 heaped tsp berry powder
  • 1 heaped tsp hemp protein (easy to digest and safe for kids)
  • Pinch of salt
  • 1/4 cup dried strawberries (optional)

METHOD:

  1. Melt and combine:
    • 25g cacao butter
    • 2-3 dates
    • 1/2 cup rice syrup
  2. Then add the following and blend together:
    • 330g nuts and seeds
    • 1 heaped tsp berry powder
    • 1 heaped tsp hemp protein
    • Pinch of salt
    • You can also add chunks of dried strawberries and vary the nuts/ seeds/berry blend, if you wish
  3. Place in freezer for 10 minutes, and then you can store in the fridge until it’s all gone!

* For nut free schools, you can use brown rice puffs with no added sugar in place of the nuts.
