Spinach and Rocket Salad with Feta and Pomegranate:

Ingredients:
– 3 cups fresh spinach leaves
– 2 cups rocket
– 200g feta cheese, crumbled
– 1 cup pomegranate seeds
– 1/2 cup dried cranberries
– 1/2 cup roasted slivered almonds

For the Dressing:
– 2 tablespoons Dijon mustard
– 3 tablespoons apple cider vinegar
– 1/4 cup extra virgin olive oil
– 2 tablespoons raw honey

Instructions:

  1. In a large bowl, combine the fresh spinach leaves and rocket.
  2. Sprinkle crumbled feta, pomegranate seeds, dried cranberries, and roasted slivered almonds over the greens.
  3. In a separate bowl, whisk together Dijon mustard, apple cider vinegar, extra virgin olive oil, and raw honey to create the dressing.
